Sassy Black Bean Soup
A quick & easy soup that tastes great. Serve with cornbread and you have a complete meal. Yield: 6 servings (1 cup)

- 1 Tb olive oil
- 1 Cup onion, diced
- 2 cloves garlic, minced
- 2 15oz can black beans, drained
- 1 14oz can stewed tomatoes (or diced)
- 1 10.5oz can chicken broth
- 1/2 Cup picante sauce
- 1/4 Cup water
- 1 tsp ground cumin
- 2 Tb lime juice
- (fresh cilantro, chopped - optional)
Heat oil in large saucepan over medium heat until hot.
Add onion & garlic. Saute 5 minutes or until tender.
Stir in beans, tomatoes, chicken broth, picante sauce, and ground cumin. Bring to a boil.
Reduce heat and simmer uncovered for 15 minutes.
Remove from heat & stir in lime juice.
Garnish with cilantro.
Some people absolutely do not like cilantro. Keep this in mind when serving company.
Substitute 1/2 tsp garlic powder for fresh garlic, if desired.
You can make your own chicken broth using a bouillon cube & water, if desired.
You can use diced tomatoes instead of stewed. However, you may need to cook the tomatoes longer than 15 minutes.
Bottled lime juice is fine for this recipe & does not affect the taste.
This recipe tastes even better the following day. However, you may need to add more cilantro & lime juice.
